Decadent Delight: Cheesecake Brownie Recipe

Valentine’s Day is fast approaching and that means spoiling the ones you love (yourself definitely counts!) and for me that means baking. So I rifled through my favourite recipes and found one that’s simple, delicious and sure to wow your valentine(s)!

Cheesecake and brownies: two decadent and delicious and traditional Valentine’s Day desserts: so I ask you, why not combine them for the ultimate decadent experience?! I present you, the brownies of my childhood.

In my house, we have a photo album filled not with pictures, but with recipes we’ve collected over the years: from family, friends, magazines – the majority of them are on scraps of paper in my mother’s handwriting and you can always tell our favourite ones from the amount of ingredients that have made themselves at home on the paper! This recipe is one of those. I can remember my mom making these when I was a kid and it being a huge treat, and then when I started university, I was a part of a study group that exchanged baked goods, and these became my signature dish: I mean it’s a fudge brownie swirled with cheesecake! How could it not be a hit?! I think it’s telling that my mother just simply titled these “Brownies” when transcribing the recipe: they’re so good, they blow traditional brownies right out of the water! The best part? They may sound complicated but honestly, they’re incredibly easy to make – but you don’t have to tell people that!

What you need:

  • 8oz package of block cream cheese

  • 4oz of unsweetened baking chocolate (chopped)

  • 4 large eggs

  • 2 ½ cup sugar

  • 1 cup butter room temperature (melt butter and chocolate til melted**)

  • ½ teaspoon salt

  • 2 teaspoon vanilla

  • 9x13 baking tin

** I find the easiest way to do this is to put the chopped chocolate and cubed butter in a glass measuring cup and microwave for 20 seconds at a time, stirring between each round til completely melted. You can also do this in a metal bowl over a pot of boiling water, stirring the butter and chocolate together til completely melted.

What you do:

  • Preheat oven to 350 degrees Fahrenheit

  • Beat 3 eggs, 2 cups sugar together til smooth. Add flour, salt, 1tsp vanilla and melted chocolate mixture, and stir til combined. Pour into pan (lined with parchment paper).

  • In a separate bowl, beat cream cheese and remaining egg until smooth. Add ½ cup sugar and vanilla, and beat til combined. Swirl into brownie mixture. (Betty Crocker has a great video on YouTube demonstrating the method: https://bit.ly/2SbzOX2)

  • Bake for 20mins at 350; reduce temperature to 325 and bake for another 20mins.

  • Let cool, cut and enjoy!

See what I mean? Not many ingredients, nothing too fancy! Even though swirling seems scary, and honestly I still struggle with it at times (my swirl this time was fairly mediocre) but honestly no matter what its going to taste amazing, and look better than you expect!
