Okay, I don’t know about you but there’s a certain point on Easter Weekend where I’ve eaten my own weight in mini eggs, and now it’s time for dessert and I just can’t fathom eating any more chocolate… Luckily I’m usually the one making dessert so I can make the executive decision and pick some alternative flavours! I did the legwork for you babes and have tested out two potential options for dessert alternatives to tone down the chocolate overload this upcoming holiday weekend!
Up first, Lucky Charm Marshmallow Bars:

Okay so these caught my eye for two reasons: 1) they are super cute; 2) they are super easy to make! If you’ve ever made rice krispy squares, this is the exact same idea, just with a different cereal.
RECIPE:
Ingredients:
- 4 tbsp butter
- 1 regular sized bag of mini marshmallows + 2 cups
- 5 cups Lucky Charms
- optional rainbow sprinkles
Instructions:
- Butter or line a 9x13” pan with parchment paper
- Melt the butter in a large pot, then stir in the bag of mini marshmallows a handful at a time until smooth
- Toss in the final two cups of marshmallows and stir until mostly smooth
- Stir in the Lucky Charms about 2 cups at a time until coated
- Pour the mixture into the lined pan and lightly press it down until level
- Add the rainbow sprinkles and leave the mixture to set in the pan for at least two hours (you can put it in the fridge if you need them sooner!)
All told, this recipe takes maybe 15minutes of prep time, so if you’re pressed for time this may be the recipe for you! I made a couple of adjustments to this recipe: the biggest one was that I ended up halving the recipe, partially because this was primarily a test batch, but also because when I did the math I was going to have to buy two boxes of Lucky Charms in order to get five cups and that felt excessive at the time! Even halving the recipe, I still ended up with 12 good-sized bars, so unless I was aiming to feed a bigger crowd, I’ll probably stick to halving the recipe. I opted out of the rainbow sprinkles, and I’m glad I did! I think they would have pushed the sweetness factor over the top, and without them they were already pretty epically sweet - definitely sweeter than your traditional Rice Krispy square.
All in all, I like this recipe for Easter, especially if your family gathering has younger kids, or even just big kids at heart: it’s tasty, the colours are perfect for Easter and it’s sure to be a hit!

This is now the most requested dessert in my roster: everyone I’ve ever made it for has asked me to make it again for them - and I don’t see that changing any time soon, because this pie is delicious, and shockingly easy to make! Seriously, people don’t believe me when I tell them how simple it is, and honestly I’m going to stop trying and keep the mystery alive! Check out the link for the original recipe, but I’m going to give you babes my tweaked version:
RECIPE:
Ingredients:
Crust:
- 1 1/2 cup graham cracker crumbs
- 1/4 cup sugar
- pinch of salt* If you’re using salted butter, adjust your salt to taste
- 6 tbsp butter, melted
Filling:
- 1 (8oz) package of cream cheese, room temperature
- 1 (14oz) can of sweetened condensed milk
- 2 lemons, juiced and zested
Instructions:
Crust:
- Preheat the oven to 350oF
- In a medium sized bowl, combine the graham cracker crumbs, sugar and salt. Stir in the melted butter until combined.
- Pat into a foil pie pan until firm, and bake for 7 minutes.
- Let cool while you make the filling.
Filling:
- Using a stand or hand mixer, beat the cream cheese until smooth.
- Add the sweetened condensed milk, lemon juice and zest and beat until as smooth as possible.
- Pour into the prepared crust and smooth the top with a spatula (you can also use a spoon or knife if you don’t have a spatula handy).
- Chill until ready to serve.
See? Super simple, comes out perfect every time and oh my goodness it is delicious! This dessert is like a silky version of cheesecake, but is significantly lighter in texture so you can eat more of it - and trust me, you’ll want to! If you’re looking for something a bit fancier than the Lucky Charm marshmallow bars, this is a quick way to impress your family and/or friends, at Easter or any other get-together… well at least as long as everyone’s a fan of lemon!
